Blintz Soufflé
Ingredients
- 4 eggs
- 1½ cups sour cream (350 ml)
- 1 teaspoon vanilla extract (5 ml)
- ½ cup sugar (125 ml)
- ½ cup orange juice (125 ml)
- 12 frozen blintzes (any type - we like 6 cheese and 6 blueberry)
- ¼ cup butter (50 ml)
Preparation
- Melt butter and coat baking dish.
- Place blintzes in baking dish.
- Mix all other ingredients, and pour over blintzes.
- Set aside for one hour at room temperature or overnight in refrigerator.
- Bake 350°F (180°C) 45-60 minutes until golden brown on top.
- Serve with fresh berries and sour cream.
- Enjoy!
